Celebrating 36 Years of Beef 101 at Texas A&M AgriLife Extension Service
Beef 101 is a 3-day intensive hands-on program designed for anyone who has an interest in expanding their knowledge of the total beef industry. This is the foremost educational experience for basic information about the beef industry provided anywhere in the U.S.
Through input from all segments of the meat/food industries, Texas A&M AgriLife Extension and Texas A&M University Meat Science faculty have developed targeted programs for retailers, food service distributors, restaurateurs, the meat industry, and association/information representatives designed to transfer technology, or provide educational assistance where needed.
About the Workshop
The Beef 101 workshop begins with an evaluation of beef cattle to learn about how cattle are raised, fed, and handled. Participants also estimate cattle parameters that will later be measured on the beef carcass. The animals are harvested with participants having the opportunity to observe the transformation from cattle to beef. Later, participants learn about the procedures for beef carcass grading and the various premium programs now being applied to many carcasses.
After making estimates and grading the beef carcasses, participants have a unique opportunity to explore beef fabrication by cutting a side of beef into boneless, closely trimmed primal and subprimal with their teammates.
The third day of the program is devoted to beef palatability issues, beef sustainability, and evaluating the data from the fabrication exercise.
A maximum of 40 participants per session are accepted to allow for maximum hands-on participation and interaction with faculty, staff, and graduate student instructors.

Hotel information will be provided upon registration by Dr. Griffin.
Please make every effort to stay at the host hotel.
Close parking on campus is not always available, so we will be providing a university bus shuttle service to all Beef 101 events. However, the bus will only pick up and drop off at the host hotel.
Cancellations received no later than 7 days before the start of the event, will be issued a refund minus a 3% administrative fee.
If a cancellation or refund becomes necessary, please submit a Cancellation or Refund Request.
Refunds typically take 7 – 10 business days to process.
Texas A&M AgriLife Extension reserves the right to cancel this workshop if less than 20 registrants are submitted.
