Creative Sausage Making was developed by the processed meats experts at Texas A&M AgriLife after numerous requests for a basic sausage course that would allow a “first timer” to be successful, a “seasoned” veteran to pick up some new tips, or a restaurateur that wanted to learn to make artisan sausages.
The hands-on workshop will address the science of sausage formulation and engage participants in important aspects of sausage making from:
meat selection
ingredients
casings
stuffing
equipment
processing
final finished product
Participants will manufacture their own sausages (smoked and fresh sausage) using readily available equipment (commercial equipment may be demonstrated but is not the focal point of this workshop) and have an opportunity to take some home for further evaluation.

Cancellation and Refunds
Cancellations received no later than Monday Dec. 30, 2024, will be issued a refund minus an 18% non refundable Admin fee. If a cancellation or refund becomes necessary, please submit a Cancellation or Refund Request.
Refunds typically take 7 – 10 business days to process.
The event organizer reserves the right to cancel the workshop if the minimum number of attendees is not reached. A full refund will be given if the workshop is canceled by the organizer for this reason.
